2002 - today
Opening of the nougaterie in the middle of the village. This new location is more visible and bigger and opens up new opportunities for us. We develop our recipes and range of products there and welcome new customers.
The activity was beginning to develop and kept us busy through the winter months. We received locals and tourists and the premises were beginning to be a little small. Up to 2004, we wrapped the bars with irons and the papillotes were all hand-wrapped.
We fitted out the barn of the family house with a copper cauldron, a saw, etc… We prepared recipes inspired by our great grandmother Henriette, first Christmas markets in the region, first customers.
With the extension of Europe towards the countries of the south, the Provencal fruit productions met sever competition. Farming and farmers suffered.
The first effects of globalisation on farming in the Vaucluse began to be felt. One year we were told to throw away our harvest of grapes. This was a decisive moment which made us realize we had to find an alternative if we wanted to continue to make a living from farming. Up until the 2000s, we used to harvest our almonds by hand with poles and nets laid on the ground.
